In the old days, GT meant "Grand Touring." A Grand Touring car was usually a sporty type car with added accessories and options to make it more comfortable for two people to go travelling (or touring), such as more comfortable seats, air conditioning and maybe even a set of fitted luggage.

In today's market, "GT" is usually intended to denote a higher performance vehicle. It really means pretty much anything the manufacturer thinks it means, but it's usually just a more expensive option package added to a standard car.
